Watermelon & Sumac Salad

When I was growing up, my grandmother always sprinkled a bit of salt on melon just before serving. The salt brightens up the flavor of the watermelon and the sumac in this recipe adds a citrusy kick.

Ingredients

  • 4 cups chopped watermelon, chilled
  • 1 cup cucumber, peeled, sliced into half moons
  • ¼ cup radish, thinly sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup basil leaves
  • 2 tablespoons fresh mint
  • 1 tablespoon fresh dill
  • ½ teaspoon sumac
  • ½ teaspoon sea salt
  • Olive oil
  • 4 ounces feta cheese

Preparation

Combine watermelon with cucumber, radish, onion and herbs in a bowl. Sprinkle with sumac, salt and a generous pour of olive oil. Cover; marinate refrigerated for at least 30 minutes. Sprinkle with feta cheese.
