Roasted Seasoned Cauliflower

Ingredients

  • 1 head cauliflower
  • 2-3 tablespoons olive oil, preferably local
  • Couple shakes red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Zest of 1 lemon
  • 1-2 tablespoons fresh herbs, minced (parsley and chives or dill)

Instructions

Preheat oven to 375°. Cut cauliflower into florets. Place in a bowl and toss with olive oil, red pepper flakes, salt and pepper. Spread on a baking sheet lined with parchment paper.

Bake 20-30 minutes, until cauliflower is starting to brown but is still firm. Remove from oven and place in a serving bowl and toss with lemon zest and fresh herbs. Adjust seasoning to taste.
