Single Brew Milk Kefir

Ingredients

  • 2 quart-sized Mason jars with lids
  • Small strainer
  • ½ cup milk kefir grains
  • Raw milk (can use pasteurized organic grass-fed milk but allow for more time for fermenting)

Preparation

Put kefir grains into a 1-quart Mason jar.

Pour milk (goat or cow) over the grains until jar is 80% full. Put lid on and shake.

Leave milk and grains on counter out of the sun for 24 hours.

Strain milk into another Mason jar. Optional: Pour fresh milk onto the same kefir grains and begin again.

Leave the strained kefir milk on counter until you are happy with the level of fermentation (1–3 days).

Store the fermented milk kefir in refrigerator. Drinking a little each day will encourage gut diversity.
