Cabbage Salad

Malfouf salad is a middle eastern inspired cabbage salad, a healthy alternative to coleslaw typically dressed with lemon juice, olive oil, garlic, salt and dried mint. Pairs well with almost anything – fish, poultry, tofu, or red meat. Leftovers go great on a sandwich.

Ingredients

  • ½ medium head of cabbage, thinly sliced
  • 1 medium clove garlic, minced
  • 2 Tablespoons fresh lemon juice
  • 2 Tablespoons extra virgin olive oil
  • ½ teaspoon salt
  • 2 Tablespoons chopped fresh mint leaves or dried mint

Preparation

In a large bowl mix the garlic, lemon juice, olive oil, salt, and mint until thoroughly combined.
Simply add the shredded cabbage to the bowl and toss to coat.
Let the salad sit at room temperature for 10 minutes to allow flavors to combine or cover and refrigerate to allow the flavors to meld a little more and serve at later time. Served room temperature or cold, it's a tasty salad either way.
