Try this super simple strawberry vinaigrette dressing to dress up your local greens and impress your family and friends.

Spring Salad with Ventura Albion Strawberry Vinaigrette

Quick and simple, this delicious Strawberry Vinaigrette is delightfully sweet and tart, and goes wonderfully on a bed of local greens.

Ingredients
For the dressing
- 2 cups fresh strawberries with tops cut off
- 1 tablespoon organic Balsamic vinegar
- 2 tablespoons local honey
- 3 tablespoons organic raw apple cider vinegar
- 4 tablespoons organic extra virgin olive oil
- ½ teaspoon fine sea salt
- ½ teaspoon freshly ground black pepper
For the salad
- 1 small head of butter lettuce
- 1 small romaine heart
- 2-3 fresh strawberries for garnish
- Edible flowers (optional garnish)
Instructions
For the dressing
- To make the dressing blend all the ingredients in a blender or food processor until completely smooth.
- Pour into a glass jar with a tight fitting lid.
- Refrigerate dressing until ready to serve. When ready, shake the dressing and add to the salad right before serving.
- Dressing will last 5-7 days in the refrigerator.
For the salad
- Pull several leaves from the inner section of a head of butter lettuce, cut a few crisp romaine leaves in half, and arrange on two plates.
- Garnish with fresh strawberries 🍓 and edible flowers.
