
Seb’s Charred Salsa Tutorial
Every good salsa has onion, garlic, tomatoes, chilis and lots of salt. My favorite form of salsa is charred. I take all of my base ingredients and char them black. (I do it in the wood-fire oven or over coals, but a barbecue or stove top will work!) The charring pulls out the natural umami flavors to enhance every salsa. Stick that in a blender and mix with salt and you’ll have delicious salsa! Here’s a basic salsa recipe that I love to use, but try it with different onions, peppers or tomatoes and see what you get!

Ingredients
- 5 tomatillos
- ½ serrano pepper
- ¼ onion
- 3 cloves garlic
- 1 bunch cilantro
- 6 green onions
- Salt (to my taste, way more than you’d ever expect)
Instructions
- Char all ingredients except the cilantro and green onions.
- Blend all charred ingredients in a blender to desired chunk. (I like a chunkier salsa.)
- Add cilantro and green onions and blend until incorporated.
- Salt: Start with ½ teaspoon, then taste, then add more until you have the perfect flavor. (You might use more than you would think—it is a flavor enhancer!)
