Homemade Chicken Sausage

Perfect for making our Sweet Potato Hash and Eggs (recipe link in notes).
Course Breakfast
Ingredients
- 1 pound ground chicken
- ½ cup diced shallots (about 2 large)
- 2 tablespoons diced green onion
- 1 teaspoon chili powder
- 1 teaspoon ground fennel seed
- ½ teaspoon ground coriander
- 1 teaspoon fresh sage
- ½ teaspoon sea salt
- ½ teaspoon ground black pepper
- 1 pinch red pepper flakes
Instructions
- In a large bowl, stir together all ingredients.
- Brush a nonstick or cast-iron skillet with olive oil and heat over medium heat. Add the crumbled sausage mixture and cook through to use for the recipe.
- For sausage patties, divide mixture into 8–10 portions and shape into small patties. Cook the patties until browned and cooked through, about 5 minutes per side.
