Homemade Chicken Sausage

Perfect for making our Sweet Potato Hash and Eggs (recipe link in notes).
Course Breakfast

Ingredients
  

  • 1 pound ground chicken
  • ½ cup diced shallots (about 2 large)
  • 2 tablespoons diced green onion
  • 1 teaspoon chili powder
  • 1 teaspoon ground fennel seed
  • ½ teaspoon ground coriander
  • 1 teaspoon fresh sage
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 1 pinch red pepper flakes

Instructions
 

  • In a large bowl, stir together all ingredients.
  • Brush a nonstick or cast-iron skillet with olive oil and heat over medium heat. Add the crumbled sausage mixture and cook through to use for the recipe.
  • For sausage patties, divide mixture into 8–10 portions and shape into small patties. Cook the patties until browned and cooked through, about 5 minutes per side.
