Watermelon and Peach Welcome Coolers

This is a fun way to welcome guests to dinner on a hot day. I did this last year for some friends and they loved it. The vodka shot over the fruit is optional, but I found everyone wanted it. I love using short cocktail glasses or stemless wine glasses for these coolers, as they’re great vessels for food and drinks and feel good in your hands.

Ingredients

SERVINGS: 6 – 8 Serving(s)
  • 3 cups cubed watermelon
  • 3 cups peaches cut into cubes
  • 1 tablespoon lime zest
  • 2–4 tablespoons lime juice
  • 1 tablespoon finely chopped mint
  • Vodka (optional)

Preparation

Gently mix watermelon, peaches, lime zest, 2 tablespoons lime juice and mint in a large bowl.

Taste and add more lime juice, if desired.

Divide fruit mix equally into glasses. Keep chilled until guests arrive. If using vodka, pour a shot over each glass of mixed fruit right before serving. Serve with a small fork.
