There are so many things to do in Ventura County during the summer, from early morning hikes in Matilija Canyon near Ojai to late afternoon strolls on Silver Strand Beach in Oxnard, from paddle boating in the Ventura Harbor to having a picnic in Gardens of the World in Thousand Oaks. Oh, so many things to do and places to see. Healthful, quick meals that don’t heat up the kitchen are a must. These three recipes fit the bill—and they do double-duty as being suitable for entertaining.
