Terry Walters wants us to all to eat wholesome foods, minimally processed for our health and well-being, and to be educated consumers. Her vegan cookbook's reassuring approach to bringing about change doubles as a practical guide on how to accomplish it, season by season. She ties in ways to help the healthy attitude trickle down to our children, too. The recipes are varied, healthful and focus on flavor. Even better, Walters created them to take less than 30 minutes. She also offers a welcome section on shortcuts and tips for buying packaged ingredients. Each season's chapter starts with clean living tips before progressing to recipes that take cooks from a meal's start to dessert's finishing touch. This winter, cooks can delight their families with Roasted Fennel and Multi-colored Beets with an olive-oil-balsamic vinaigrette, or Tamarind and Blood Orange Tofu. For a wintery dessert, there are recipes like Peppermint Slice: chocolate-peppermint brownies.
